Making Scrambled Eggs with Green Onions

1) wash green onions well, drain the water, and chop them finely
2) place some oil or butter into a frying skillet and wait to heat up, then place the onions inside, season with some salt to taste, and fry them about 2-3 minutes or until slightly glassy
3) crack the eggs, add them into the skillet, and fry ingredients for about 2-3 minutes or until the eggs harden while combining ingredients gently to avoid sticking to the bottom and burning

Breakfast scramble or scrambled eggs belong to the most popular breakfast ideas all over the world. Of course, besides breakfast, this dish with eggs can be served as a quick snack or warm appetizer as well.

Making scrambled eggs is very easy, no matter if you make plain scrambled eggs or combine the eggs with other ingredients. I like eating eggs very much, so I cook pretty often foods including eggs. Needless to say, breakfast scramble gets on my kitchen table very often!

Along with ham or bacon, green onions are some of my favorite ingredients to combine with eggs. When I don’t have green onions on hand, I cook eggs with regular onions or leeks, but the version with green onions is still the favorite.

As you can see in the video, making scrambled eggs is extremely easy, so anyone can prepare this breakfast recipe with very good results.

Being so simple, I don’t have many secrets to share about the recipe. What I still recommend is to finely chop the onion to better combine with the eggs. I also recommend that you pay attention to the amount of oil or butter you use to avoid cooking a too fatty meal.

Finally, I emphasize that this dish tastes best as long as it is hot, so I do not recommend cooking it too long before serving or keeping it in a warm place.

Another thing I share with you is that you can add other ingredients if you want to get a very hearty breakfast. For example, you can include in the recipe pressed ham or smoked bacon. All you have to do is cut these ingredients into small cubes and fry them together with the green onions, otherwise, the process is identical to the one described above.

Another ingredient that can be used when making scrambled eggs is matured cheese. Immediately after the breakfast scramble is ready, top it with grated Parmesan or small cheese pieces of Cheddar or Gruyere and wait a couple of minutes for the heat to soften the cheese and form a creamy layer on top.

Scrambled eggs is a dish made from eggs (usually chicken eggs) stirred, whipped, or beaten together while being gently heated, typically with salt, butter, and sometimes other ingredients.[1][2]

Only eggs and butter are necessary to make scrambled eggs,[3][4][page needed] but salt, water, milk, chives, cream, crème fraîche, sour cream, or grated cheese may be added.[5][6] The eggs are cracked into a bowl with some salt and pepper, and the mixture is stirred or whisked: alternatively, the eggs are cracked directly into a hot pan or skillet, and the whites and yolks stirred together as they cook. The mixture can be poured into a hot pan containing melted butter or oil, where it starts coagulating.[9] The heat is turned down and the eggs are stirred as they cook. This creates small, soft curds of egg. Unlike pancake or omelette, scrambled egg is virtually never browned. A thin pan is preferable to prevent browning. With continuous stirring, and not allowing the eggs to stick to the pan, the eggs themselves will maintain the pan temperature at about the boiling point of water, until they coagulate.

Once the liquid has mostly set, additional ingredients such as ham, herbs, cheese, or cream[9] may be folded in over low heat until incorporated. The eggs are usually slightly undercooked when removed from heat since the eggs will continue to set. If any liquid is seeping from the eggs (syneresis), this is a sign of undercooking, overcooking, or adding undercooked high-moisture vegetables.


In American style, the eggs are scooped in towards the middle of the pan as they set, giving larger curds.[3][14][15]
