ℹ️ Ingredients:

For the Chocolate Cake Layer:

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the Mint Cream Layer:

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1-2 tablespoons milk
  • 1/2 teaspoon peppermint extract
  • Green food coloring (optional)

For the Chocolate Cream Layer:

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

ℹ️ Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease or line a 9×9-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. Prepare Chocolate Cake Layer: In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. In a separate large bowl, mix the melted butter and granulated sugar until well combined. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Spread the batter evenly into the prepared baking pan.
  3. Bake: Bake the chocolate cake layer in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let it cool completely in the pan.
  4. Prepare Mint Cream Layer: In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, alternating with milk, until the mixture is smooth and spreadable. Stir in the peppermint extract and add green food coloring if desired. Spread the mint cream layer evenly over the cooled chocolate cake layer. Place in the refrigerator while you prepare the chocolate cream layer.
  5. Prepare Chocolate Cream Layer: In a heatproof bowl, combine the chocolate chips and heavy cream. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and the mixture is smooth. Let it cool for a few minutes, then pour the chocolate cream layer over the mint cream layer, spreading it evenly.
  6. Chill: Refrigerate the mint chocolate cake bars for at least 2 hours, or until the chocolate cream layer is set.
  7. Serve: Once set, use the parchment paper overhang to lift the bars out of the pan. Cut into squares and serve chilled. Enjoy the refreshing mint flavor combined with rich chocolate in every bite!
