  • 1 chicken legs, skin on
  • 1/2 cup chopped onion
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp turmeric
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 1/4 cup sliced preserved lemon
  • 1/2 cup pitted and stuffed green olives
  • 1 lemon, sliced
  • 1 cup chicken broth

Instructions
 

  • Preheat the oven to 375°F.
  • In a large mixing bowl, combine the chopped onion, minced garlic, ground cumin, paprika, turmeric, cinnamon, ginger, black pepper, salt, olive oil, cilantro, and parsley. Mix well.
  • Add the chicken legs to the bowl and rub the spice mixture all over them, making sure that they are coated evenly.
  • Place the chicken legs in a large baking dish and arrange the sliced lemon and stuffed olives around them.
  • Pour the chicken broth over the chicken legs and cover the dish with aluminum foil.
  • Bake in the preheated oven for 1 hour, then remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the skin is crispy and golden brown.
  • Remove the chicken legs from the baking dish and place them on a serving platter. Top with the preserved lemon and olives from the baking dish, and garnish with fresh cilantro and parsley.
