How to Make Moroccan Chicken at Home from Scratch


Gourmet Moroccan Chicken
Ingredients
- 1 chicken legs, skin on
- 1/2 cup chopped onion
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp turmeric
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp ground black pepper
- 1/2 tsp salt
- 1/4 cup olive oil
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- 1/4 cup sliced preserved lemon
- 1/2 cup pitted and stuffed green olives
- 1 lemon, sliced
- 1 cup chicken broth
Instructions
- Preheat the oven to 375°F.
- In a large mixing bowl, combine the chopped onion, minced garlic, ground cumin, paprika, turmeric, cinnamon, ginger, black pepper, salt, olive oil, cilantro, and parsley. Mix well.
- Add the chicken legs to the bowl and rub the spice mixture all over them, making sure that they are coated evenly.
- Place the chicken legs in a large baking dish and arrange the sliced lemon and stuffed olives around them.
- Pour the chicken broth over the chicken legs and cover the dish with aluminum foil.
- Bake in the preheated oven for 1 hour, then remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the skin is crispy and golden brown.
- Remove the chicken legs from the baking dish and place them on a serving platter. Top with the preserved lemon and olives from the baking dish, and garnish with fresh cilantro and parsley.
