Easy Chicken Stew Recipe

Mushrooms and chicken breast are two of my favorite ingredients to cook stew. Therefore, I combined them and it turned out to be this easy chicken stew recipe with mushrooms that the whole family simply loves!

How could it be otherwise if, in addition to the two ingredients already mentioned above, the recipe includes flavored vegetables such as red bell peppers, onions, garlic, tomatoes, all refined with a subtle taste of fresh dill?

Mushroom and chicken stew is a hearty meal that will fill you up and keep you fit. The stew is packed full of flavor from the mushrooms, chicken, and vegetables.

The best thing about this stew is that it is so easy to make, all you have to do is simmer the mushrooms and chicken, add in some stock and any other ingredients, and cook it until the chicken is cooked through. Then all you have to do is sprinkle over some fresh dill and you have an amazing stew that the whole family will love!

This stew can easily be made vegan by omitting the chicken!

Boneless Skinless Chicken Breast Fillet

1) 1.5 kg/50 oz of skinless boneless chicken breast
2) 2 kg/70 oz of fresh mushrooms (Portobello, Champignon, or another similar type)
3) 600 g/21 oz of red bell peppers
4) 600 g/21 oz of tomatoes
5) 250 g/9 oz of yellow onions
6) 3-5 cloves of garlic
7) 4 tbsp of olive oil
8) some salt and ground black pepper to taste
9) 300-500 ml/10-17 fl oz of chicken stock
10) 1 bundle of dill

Easy Chicken Stew with Mushrooms

➡️ Eager to know how to cook my mushroom and chicken casserole? The recipe is very tasty and easy to cook, so I wholeheartedly recommend it!
Below are listed the steps required to cook the mushroom chicken stew recipe.

Total Time: 1 hour

1) Cut the chicken breast into pieces

Cut the chicken breast into medium pieces with a sharp knife.

2) Cut the mushrooms

Wash the mushrooms well, then rinse and cut them into medium pieces.

3) Wedge the peppers

Wash the bell peppers, rinse them, remove the stub and seeds, then cut them into wedges.

4) Chop the onions and garlic

Peel the onions and chop them finely, do the same with the cloves of garlic

5) Chop tomatoes

Wash and rinse the tomatoes and chop them coarsely.

6) Start cooking the mushrooms

Pour 2 spoons of oil into a large pan, place it on the stove over a high temperature, wait to heat the oil up, and toss the chopped mushrooms inside.

7) Fry the mushrooms

Cook the mushroom until the water drops completely, then fry them until they have a light golden color (about 10 minutes).

8) Set mushrooms aside

Take the fried mushrooms out of the pan and set them aside.

9) Place chicken breast in the pan

Pour the rest of the oil in the pan, wait to heat up, and toss the chicken breast pieces inside.

10) Bleach the chicken breast

Season with some salt to taste and fry the chicken breast until bleached while stirring occasionally (about 10 minutes).

11) Add onions and bell peppers

Add the chopped onions and bell pepper wedges to the pan and cook them for about 5 minutes while stirring.

12) Add garlic and tomatoes

Add the garlic and tomatoes and continue cooking the ingredients for about 10 minutes.

13) Add fried mushrooms

Place the fried mushrooms back into the pan.

14) Season the stew

Season the stew with some ground black pepper to taste.

15) Pour chicken stock

Pour some chicken stock as needed so that the ingredients are almost completely dipped into the liquid.

16) Complete the chicken stew

Reduce the temperature to low and simmer the stew until the liquid drops and all the ingredients are very tender (about 15 minutes).

17) Flavor the stew with fresh dill

Chop the dill coarsely, toss it into the pan, combine the ingredients, and cook them for about 1-2 minutes more before serving.

  • Avoid cutting the chicken breast into pieces that are too small or too large, the large ones may remain raw inside, the small ones may break into very small pieces during cooking.
  • Use only very fresh mushrooms, if you don’t have fresh mushrooms on hand you can also use whole canned mushrooms, but in this case, skip the step of frying them
  • I recommend red bell peppers for this recipe because they are sweeter but you can use any other type of pepper, regardless of their color.
  • If you like spicy food, you can add 1-2 chili peppers or you can replace the black pepper with hot chili pepper.
  • Chicken broth is recommended for a stronger chicken taste, but you can also use water instead if you don’t have this ingredient at hand.
  • If the stew is too watery in the end but you have to stop cooking the stew because all the ingredients are very tender, you can add 1-2 tablespoons of cornstarch to get a creamier consistency of the sauce.
  • Dill can be replaced with other herbs such as parsley or coriander.
  • If the sauce is too low, you can add a tablespoon of heavy cream to each plate to get a creamy sauce.
