Ingredients
  

  • 8 chicken leg quarters (you can also cut chicken leg quarters into pieces)
  • salt and black peppercorns to taste
  • garlic cloves to taste (I recommend 8-10 garlic cloves for a strong garlic flavor, less for a mild flavor)
  • 800/28 g/oz ripe quince
  • 3 tbsp honey
  • nutmeg powder to taste (I recommend 1/2 tsp)
  • some water (about 250 ml/8.5 fl oz); you can also use chicken broth or white wine instead
  • some olive oil (1-2 tbsp)

Instructions
 

  • season chicken legs with salt, then place them on a tray with the skin up
  • add garlic cloves and black peppercorn to taste
  • peel quince, remove the stub and seeds, then slice them up or cube them, as desired
  • add honey and nutmeg powder over quince slices and combine ingredients well
  • pour some water or dry white wine into the tray and some olive oil over the chicken leg quarters, then place quince slices between the chicken legs
  • seal the tray with aluminum foil and put it into the oven at 180 C/360 F for about 30-45 minutes
  • remove foil, put the tray back in the oven, and roast chicken with quince at 250 C/480 F until the skin on chicken is golden brown (about 15 minutes)
  • turn the oven off, cover again the food with foil, and wait about 30 minutes before serving (recommended)

Notes

Cooking Tips:
  1. Select ripe and fragrant quince: When choosing quince, look for fruits that are golden-yellow with a fragrant aroma. Ripe quince will have a slightly soft texture and will lend a delightful sweetness to the dish when baked with the chicken legs.
  2. Marinate for enhanced flavors: Consider marinating the chicken legs before baking to infuse them with additional flavors.
