  • 17.5 oz chicken drumsticks
  • 2-3 garlic cloves or to taste
  • 1/2 tsp salt or to taste
  • 1/4 tsp ground black pepper or to taste
  • 1 tsp spicy or sweet paprika
  • 2 tbsp olive oil
  • 7 oz tomatoes, sliced or chopped
  • some fresh tarragon leaves or 1/2 tsp of dried tarragon
  • 7 fl oz water, chicken stock, or white wine

Instructions
 

  • place chicken drumsticks on a tray
  • crush or place garlic cloves into a bowl
  • add some salt and ground black pepper over the crushed garlic
  • add paprika and olive oil into the bowl, then mix well all ingredients by hand until you get a smooth paste
  • rub well chicken drumsticks all over with the previously prepared marinade (you can leave the drumsticks to marinate overnight or for a few hours)
  • cut tomatoes into thin slices or chop them
  • place tomato between drumsticks
  • place a few fresh leaves of tarragon over drumsticks or sprinkle over some dried tarragon
  • pour water, stock, or wine into the tray
  • seal the tray with aluminum foil and place it into the oven at 180 C/350 F for about 30 minutes
  • remove foil, then place the tray back into the oven and roast the chicken at the highest temperature until golden brown, flip the drumsticks once to roast evenly
