Ingredients

  • 35 oz thin pork slices (pork chops, with or without bone, but you can use other pork cuts as well, such as sliced pork tenderloin, pork neck, or fresh pork ham without fat)
  • 2 eggs
  • 4 tbsp all-purpose flour
  • salt and ground white pepper to taste
  • some cold water
  • 10 fl oz sunflower oil or another oil type with neutral flavor like palm oil

Instructions

  • break eggs into a bowl, then beat them up with a fork
  • add flour and very little cold water, then combine all ingredients until you get a smooth mixture, season it with salt and ground white pepper to taste
  • cut the pork loin into chops for schnitzel, flatten meat slices to about half a finger thickness, then place them into the previously prepared mixture and coat them completely
  • place oil in a pan over medium temperature and wait to warm up
  • place coated pork chops in the pan and wait to golden on the bottom side (about 3-4 minutes)
  • flip pork schnitzels and wait to golden evenly (about 1-2 minutes)
  • take pork schnitzel without breadcrumbs out from the pan, drain oil well, then place it on a plate with absorbent paper to remove any excess oil
  • serve French pork schnitzel while it’s warm and avoid covering the dish where you keep it because the crispy crust will soften from the steam

Notes

Cooking Tips for the best Results:

  1. Pound the pork cutlets thinly and evenly: It is important to pound the pork cutlets evenly to ensure they cook evenly and become tender. Use a meat mallet or a rolling pin to pound the pork cutlets to a uniform thickness of about 1/4 inch.
  2. Keep the pan hot and well-oiled: Heat a generous amount of oil in a large skillet over medium-high heat until hot but not smoking. Use enough oil to cover the bottom of the pan and ensure the schnitzel doesn’t stick. You can use butter, vegetable oil, or a combination of both.
  3. Use a non-stick skillet: If you don’t have a non-stick skillet, you can use a well-seasoned cast-iron skillet. A non-stick skillet will help prevent the schnitzel from sticking to the bottom of the pan.
  4. Don’t overcrowd the pan: Fry the schnitzel in batches if necessary, and don’t overcrowd the pan. Overcrowding the pan will result in uneven cooking and steaming, which can lead to soggy schnitzel.
  5. Serve immediately: Serve the schnitzel immediately after cooking to ensure it stays crispy. If you need to hold the schnitzel, place it on a wire rack in a warm oven until ready to serve.
