➡️ This traditional favorite is often served with roast potatoes and vegetables. The best way to buy pork sirloin is from a butcher, who will be able to cut it to your desired thickness and remove the bones if you want to cook a boneless pork roast.


➡️ Personally, I prefer the pork sirloin on the bone because the meat remains more tender and juicy (see how to cook a bone-in pork loin roast), but also the boneless pork loin can be transformed into a perfect roast if it is prepared properly. Below are listed the needed ingredients and the cooking methods.

Boneless Pork Loin Fillet

1) 2.5 kg/90 oz of boneless pork sirloin
2) 4-5 cloves of garlic or to taste, very finely chopped or minced
3) some salt and ground black pepper to taste
4) 1/2 tsp of coriander powder
5) 1/2 tsp of thyme powder
5) 2 tbsp of vegetable oil
6) fresh zest from a lemon
7) 3-4 fresh thyme springs (optional)
8) 0.5 l/15 fl oz of white wine

Total Time: 1 hour and 30 minutes

1) Prepare the marinade for the pork sirloin roast

Place vegetable oil into a bowl, add lemon zest, minced garlic, salt, ground black pepper, dried thyme, and dried coriander, then mix the ingredients to combine them very well.

2) Marinate the pork sirloin

Rub the pork sirloin all over with the previously prepared marinade.

3) Place the loin on the tray

Place the pork loin on a tray, pour the wine and half the glass of water, add the thyme springs if used, then seal the tray with aluminum foil.

4) Put the tray in the oven

Put the tray in the preheated oven at 180C/360F for about 50 minutes or until the sirloin is tender and the liquid in the tray has dropped by about two-thirds.

5) Remove the foil and roast the sirloin

Remove the foil from the tray, put it back in the oven at 290C/550F, and roast the sirloin until golden brown (about 30 minutes), turn it over once or twice so that it is evenly browned.

6) Wait to rest the pork roast

Turn off the oven and leave the tray inside for about 30 minutes before slicing the roast.
