Many people like eating red beans and rice together. I am no exception and, as such, I often cook these two very tasty ingredients. One of my favorite casserole recipes contains, besides red kidney beans and rice, smoked sausages of kielbasa type, which fits very well with them and together create an incredibly tasty dish!

Raw Red Kidney Beans

1) 600 g/21 oz of smoked sausages like kielbasa or another similar type, sliced
2) 100 ml/3.5 fl oz of vegetable oil
3) 500 g/17 oz of onions, chopped
4) 4-5 cloves of garlic or to taste, chopped
5) 1 l/35 fl oz of tomato broth
6) up to 1 l/35 fl oz of lukewarm water
7) some salt and ground black pepper to taste
8) 1.6 kg/56.5 oz of canned red beans, rinsed and drained
9) 400 g/14 oz of white rice, washed and drained
10) 1 bundle of fresh parsley leaves, chopped

Red Beans and Rice Casserole with Smoked Sausage

step 1: heat up the oil into a large pan, then add the sliced sausage and fry it until slightly brown over a medium temperature (3-5 minutes)
step 2: add the chopped onion and garlic and continue frying for 2-3 min to soften them
step 3: pour the tomato broth into the pan
step 4: pour some lukewarm water as needed, depending on the broth consistency
step 5: season with some salt and ground black pepper to taste
step 6: place the red beans into the pan
step 7: place the rice into the pan
step 8: mix the ingredients, reduce the temperature to low, and simmer the casserole until the sauce lowers (about 30 minutes)
step 9: sprinkle some chopped parsley leaves to taste over the red beans casserole
step 10: place the lid and wait 15-30 minutes before serving for the rice to absorb the sauce and get fluffy

  • most often, I cook this bean casserole recipe with red kidney beans, but you can use other red bean types and even other bean varieties like white bean, black bean, and so on
  • to save time, I use canned beans, still, you can use dried beans that you can boil and drain previously
  • any type of rice is suitable for this recipe, but the best is a long grain rice type
  • if you have time, it’s ideal to let the rice soak in water for at least 30 minutes before cooking
  • the range of smoked sausage you use must be neither too raw nor too dry and, as such, kielbasa is ideal, but you can also use chorizo or another similar type of sausage
  • cut the sausage into medium-thick slices to avoid breaking during cooking
  • tomato broth can be replaced with tomato paste that must be diluted beforehand, depending on the consistency of the paste, you need 3-5 tablespoons of paste to replace the amount of tomato broth in the recipe
  • simmer the red beans and rice casserole over a low temperature as to allow enough time to blend the flavors better and soften all ingredients
