Ingredients
  

  • 6 lb lamb shoulder
  • some salt and ground black pepper to taste
  • 2-3 rosemary twigs or 1 tsp of dried rosemary powder
  • 4-5 garlic cloves or to taste, coarsely chopped
  • 1 tsp Provence spice mix
  • 3-4 tbsp olive oil

Instructions
 

  • rub the shoulder of lamb with salt all over and place it on a roasting tray
  • place rosemary twigs on the tray
  • add over lamb some chopped garlic to taste
  • grind over some black pepper to taste
  • sprinkle over lamb Provence spice mix
  • pour some water into the tray (you can also use wine for a gourmet twist)
  • pour olive oil over the lamb shoulder
  • seal the tray with aluminum foil and put it into the oven at 200C/390 F for 45-60 min or until the lamb is tender
  • remove the foil and place the tray back in the oven at 270C/520F for 15-30 min or until golden

Notes

Cooking Tips:
  1. Remove the lamb from the refrigerator and let it sit at room temperature for at least an hour before cooking. This will allow the lamb to cook more evenly and help it retain its juiciness.
  2. Use a meat thermometer to check the internal temperature of the lamb while cooking. For medium-rare, the internal temperature should be between 135°F to 140°F, and for medium, it should be between 145°F to 150°F.
  3. Add more aromatics such as garlic cloves or onion wedges to the roasting pan for added flavor.
  4. Let the lamb rest for at least 10 to 15 minutes after cooking to allow the juices to redistribute throughout the meat. This makes the lamb even more tender and juicy.
  5. To ensure that the lamb is cooked evenly, baste it with its own juices periodically while it is roasting. This helps the meat to stay moist and enhances its overall flavor.
