Raw Lamb Shoulder

1) 3 kg/100 oz of lamb shoulder
2) some salt and ground black pepper to taste
3) 2-3 rosemary twigs or 1 tsp of dried rosemary powder
4) 4-5 garlic cloves or to taste, coarsely chopped
5) 1 tsp of Provence spice mix
6) 3-4 tbsp of olive oil

French Roast Lamb Shoulder

Step 1: rub the shoulder of lamb with salt all over
Step 2: do place rosemary twigs in the tray
Step 3: do add over lamb some chopped garlic to taste
Step 4: grind over some black pepper to taste
Step 5: sprinkle over Provence spice mix
Step 6: pour some water into the tray
Step 7: pour olive oil over the lamb shoulder
Step 8: cover the tray with foil and put it into the oven at 200C/390 F for 45-60 min or until tender
Step 9: do remove foil and place the tray back in the oven at 270C/520F for 15-30 min or until golden

Lamb roast is one of my favorite foods and it really is in the first three places of the ranking. I like lamb so much, especially spring lamb, that I eat it in any way including, besides roast, soup, stew, goulash, schnitzel, and so on.

Most people cooking lamb roast are using the leg of lamb. That’s fine, but other cuts of lamb such as shoulder or lamb are also very good to cook a succulent roast that will delight your taste buds to the fullest! To be honest, I like it more eating roast lamb shoulder than any other roasted lamb type. I prefer this because the shoulder has juicier and more tender meat than the leg. However, if you prefer, this recipe can be used with any lamb cut, not just with the shoulder.

The roast lamb shoulder recipe that I share on this page is of French inspiration. The spices used are common in French cuisine and offer a characteristic flavor to the roast especially due to the Provence spice mix, used in the southern region of the country. As a result, the roast lamb shoulder is flavorful and offers a unique take of cooking lamb roast.

Garlic is another flavor used often together with lamb. This happens because they fir perfectly together and garlic has the role of attenuating the too strong aroma of lamb if it is older. You can adjust the amount used according to your tastes, I use a lot of garlic because I simply love its aroma!

Rosemary is, of course, the perfect aromatic plant to combine with lamb. The roast lamb shoulder recipe has an average amount of rosemary, but you can reduce it if you want. If you do not have rosemary twigs available, you can also use dried rosemary powder to sprinkle over the meat.

The roast lamb shoulder recipe is very easy to make and doesn’t require too much time for cooking, given that you don’t need to remain in the kitchen after the dish is in the oven.

Finally, the roast lamb shoulder goes very well with a dry red wine and a large palette of side dishes including mashed potatoes, sauteed pees, braised green beans, and so on.

In addition, the ratio of omega-3 to omega-6 fats is far better in grass-fed lamb than in the average U.S. diet.

– Conjugated linoleic acid (CLA) is found in variable amounts in grass-fed lamb. Increased intake of this nutrient has been associated with reduced inflammation and reduced body fat in some, but not all, research.

– About 40% of the fat in grass-fed lamb comes from oleic acid, a monounsaturated fat. This type of fat (for which extra-virgin olive oil is lauded) has been associated with decreased risk of heart disease.

– Grass-fed lamb is a very good source of selenium and a good source of zinc. A healthy intake of these minerals is a protective factor against oxidative stress because they are co-factors in important antioxidant enzyme systems.
