Greek Roast Leg of Lamb with Red Wine

Ingredients
  

  • 70 oz lamb, cut into pieces (leg of lamb but you can also use lamb shoulder, bone-in lamb loin, lamb ribs,, or lamb neck)
  • salt and ground black pepper to taste
  • 3-5 garlic cloves to taste
  • a few rosemary sprigs or 1-2 tsp of dried rosemary
  • 9 fl oz dry red wine
  • 2 tbsp olive oil
  • 1 lemon

Instructions
 

  • remove bones from the lamb if you want to enjoy a boneless leg of lamb roast (optional), then place the meat on a sheet pan with tall edges (you can use a large casserole as well)
  • rub the meat chunks with salt all over, then grind on top some black pepper to taste
  • place garlic cloves on the pan, optionally chop them for better flavoring
  • place rosemary sprigs on the sheet pan or sprinkle over meat some dried rosemary, then add thin lemon slices
  • pour wine into the sheet pan
  • pour some olive oil over the meat, then seal the pan with aluminum foil, place it into the fridge and wait a couple of hours to marinate the lamb (recommended if you have time)
  • remove the pan from the fridge and put it in the oven at 375°F/190°C for about 1 hour or until the lamb is tender
  • remove the foil, baste the lamb with wine, put the pan back in the oven, and roast the lamb at the highest temperature until golden brown (about 30-40 minutes), pour a bit more wine or water into the pan if necessary and baste the meat at every 10 minutes
  • turn the heat off and leave the tray in the oven for 20-30 minutes before serving roasted lamb with wine (recommended)

Notes

Cooking Tips:
  1. Choose a good quality leg of lamb, preferably from a local farm or butcher. This will ensure that you get the freshest and best quality meat for your dish.
  2. Marinate the lamb for at least 12 hours, or overnight, to allow the flavors to fully infuse into the meat. This will result in a more flavorful and tender lamb.
