Raw Chicken Leg Quarters

1) 6 chicken leg quarters (about 1,5 kg/50 oz)
2) some salt and ground black pepper to taste
3) 1/2 tsp of Provence spice mix
4) 1/2 tsp of rosemary powder (optional)
5) 5-6 garlic cloves or to taste
6) 3 tbsp of olive oil

Step 1: do place the chicken legs on a tray
Step 2: rub the chicken legs with salt all over
Step 3: sprinkle over Provence spice mix
Step 4: sprinkle over rosemary powder (optional)
Step 5: grind over some black pepper to taste
Step 6: add chopped garlic to taste
Step 7: pour some water into the tray
Step 8: pour olive oil over the chicken leg quarters
Step 9: do place the tray in the oven at 230C/440F for 45-60 min

Chicken leg quarters are at the top of my preferences. Therefore, I often cook them in different forms, both on the stove and in the oven. Although I really like all the dishes that contain chicken legs, still the roasted chicken legs in the oven have a special place in my kitchen.

The roasted chicken legs recipe on this page is of French inspiration, thing confirmed both by the aromatic herbs and the olive oil, which is often used in the south of France. The mixture of Provence spices also comes from this area, as does the preference for rosemary, which is an aromatic plant often used throughout the Mediterranean region.

I also like to use rosemary in my dishes and especially together with chicken, with which it fits exceptionally well. Of course, in case you don’t like it, you can omit it from the ingredients, however, I recommend you make roasted chicken legs flavored with it because they will have a divine taste!

As you can see in the video, the roasted chicken legs recipe is very easy and can be prepared with excellent results even by those with less experience in the kitchen. The preparation time is very short and the cooking time is quite reasonable. However, while roasting the chicken leg quarters in the oven, your presence in the kitchen is not necessary.
