1) 5 g/0.2 oz of dry yeast
2) 10 g/0.35 of granulated sugar
3) 200 ml/7 fl oz of water at room temperature
4) 300-350 g/10-12 oz of cake flour
5) a pinch of salt
6) 1 tsp of rum essence
7) 2 + 2 tbsp of sunflower oil
8) 800 g/28 oz of sweet apples
9) the juice of half a lemon
10) 30 g/1 oz of ground poppy seeds
11) 30 g1 oz of semolina
12) 80 g/3 oz of brown sugar
13) some powdered sugar for garnishing
Step 1: over the yeast put 10 g/0.35 oz of sugar and 2 tbsp of water, then mix
Step 2: sift the flour into a bowl
Step 3: put the rest of the water over the flour and a pinch of salt
Step 4: add the rum essence and yeast
Step 5: mix the ingredients to blend
Step 6: knead until you get a slightly elastic dough
Step 7: do brush a bowl with oil, put the dough inside, and brush it with oil
Step 8: put foil over the bowl and place it in the fridge overnight
Step 9: peel and cut the apples into small cubes
Step 10: put the apple in the bowl, squeeze the lemon juice over, and mix well
Step 11: put the poppy seeds in the pan and roast them for 2-3 min over high temperature stirring continuously
Step 12: melt the butter, pour it over the apples, and add the roasted poppy seeds
Step 13: add the semolina and mix the ingredients well
Step 14: put the dough on a floured surface
Step 15: knead the dough for 20-30 sec, cover it, and wait to leaven for 15 min
Step 16: cut the dough into two equal parts
Step 17: do spread half of the dough into a thin sheet
Step 18: put brown sugar over the apples and mix well
Step 19: brush the dough sheet with oil
Step 20: put half of the apples over the sheet in a uniform layer
Step 21: fold the edges of the sheet inwards, then roll it tightly
Step 22: put the roll in a tray lined with baking paper, then make the second roll, and bake them in the preheated oven at 180C/360F for about 30-40 min
Step 23: take out the tray from the oven and wait for the rolled apple cake to cool to room temperature
Step 24: sprinkle powdered sugar over the apple cake and slice it up
Apple cake is beloved by many people, so there is not surprising that a lot of fruit cake recipes feature apple among ingredients. There are different types of apple cake, of which the best known, I mean western countries, are apple strudel and apple pie.
Central and Eastern Europe have a long and rich tradition in baking apple cakes. Of these, Austria in particular has an exceptional tradition of making apple cakes. I’m sure many of you know what a strudel is and you’ve probably tasted your delicious apple strudel.
For those who don’t know, the apple strudel contains an apple filling wrapped in an unleavened dough. Similar to this world-famous cake, I share on this page a rolled apple cake recipe which, unlike strudel, has a leavened dough and contains, in addition, poppy seeds that enhance the taste of the apple and give a special note to the cake.
As far as I know, there are similar recipes in Austria and Germany, but my rolled apple cake recipe is inspired by Moldavia. It’s considered an old-fashioned apple cake but is still popular nowadays due to its exceptionally delicious taste.
Although it seems complicated at first glance, the recipe is still simple and does not require much time. The dough needs to stay cold overnight but is easy to prepare. The same goes for the filling.
