  • 3.5 oz butter
  • 4 tbsp all-purpose flour
  • 10 fl oz milk or chicken broth (you can use a bit more, depending on how thick you want to make the white sauce; the quantity depends also on the sour cream consistency)
  • salt and ground white pepper
  • 14 oz sour cream (12% fat)


  • place the butter in a saucepan and wait to soften.
  • add flour and stir continuously for about 20-30 seconds until it’s slightly roasted.
  • pour the milk or chicken broth and mix continuously until you get a smooth paste without flour lumps.
  • season with salt and pepper to taste.
  • reduce the heat to the lowest temperature, add the sour cream to the pan, and whisk continuously until the sauce begins to bubble gently and has a creamy consistency.
