This recipe takes the traditional concept of a salad and elevates it to a whole new level with a tantalizing mix of ingredients inspired by the Southwest. It's a salad that marries the richness of marinated chicken with the vibrancy of black beans, sweet corn, cherry tomatoes, and a chipotle ranch dressing. Ingredients
  

For the Salad:

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp paprika
  • Salt and black pepper to taste
  • 8 cups fresh Romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved if needed
  • 1 cup canned black beans, drained and rinsed
  • 1 cup canned sweet corn, drained
  • ½ cup red onion, thinly sliced
  • ¼ cup fresh cilantro leaves, chopped
  • ½ cup shredded cheddar cheese (optional)

For the Chipotle Ranch Dressing:

  • ½ cup mayonnaise
  • ½ cup sour cream
  • ½ chipotle peppers in adobo sauce (adjust for spiciness)
  • 1 tsp adobo sauce from the chipotle peppers
  • 1 clove garlic, minced
  • 1 tsp fresh lime juice
  • ½ tsp ground cumin
  • Salt and black pepper to taste

Instructions
 

  • Start by marinating the chicken. In a bowl, combine the olive oil, ground cumin, chili powder, paprika, salt, and black pepper. Coat the chicken breasts evenly with this mixture and let them marinate for at least 15 minutes.
  • Heat a grill or grill pan over medium-high heat. Grill the chicken breasts for about 6-8 minutes per side or until they are cooked through and have grill marks. Remove them from the grill and let them rest for a few minutes before slicing them into thin strips.
  • In a large salad bowl, arrange the chopped Romaine lettuce as the base.
  • Top the lettuce with the sliced cherry tomatoes, black beans, sweet corn, red onion, and cilantro.
  • Add the grilled chicken strips on top of the salad.
  • If desired, sprinkle shredded cheddar cheese over the salad.
  • Combine and mix ingredients for the chipotle ranch dressing
  • Drizzle the chipotle ranch dressing over the salad just before serving.

  1. For extra flavor, marinate the chicken for an extended period, ideally a few hours or overnight.
  2. Grill the chicken over an open flame for that authentic smoky taste, or use a grill pan if you’re cooking indoors.

  4. Make your chipotle ranch dressing by combining ranch dressing with a teaspoon of chipotle pepper sauce for a unique twist.
