Instructions
 

  • Begin by washing the spinach leaves and patting them dry. Then, place the spinach in a large salad bowl.
  • Add the sliced red onion, crumbled goat cheese, chopped walnuts, and dried cranberries to the salad bowl. Toss to combine.
  • In a separate bowl, whisk together the olive oil, red wine vinegar, honey, Dijon mustard, cayenne pepper, salt, and black pepper until well combined.
  • Drizzle the dressing over the salad and toss to coat the spinach leaves evenly.
  • Serve the salad immediately.
