  • 1 small red onion, thinly sliced
  • 1/2 cup cucumber, thinly sliced (about 75 grams)
  • 1/4 cup dried cranberries (about 35 grams)

For the Dressing:

  • 1/4 cup balsamic vinegar (60 ml)
  • 1/4 cup extra-virgin olive oil (60 ml)
  • 2 tablespoons honey (30 ml)
  • 1 tablespoon Dijon mustard (15 ml)
  • 1 clove garlic, minced
  • Salt and pepper to taste

  1. Rinse and dry the baby spinach thoroughly. Place the spinach in a large salad bowl.
  2. Rinse the strawberries, hull them, and slice them thinly. Add the sliced strawberries to the bowl.
  3. Thinly slice the red onion and cucumber. Add them to the salad bowl along with the dried cranberries.
  4. In a small skillet over medium heat, toast the sliced almonds, stirring frequently until they are golden brown and fragrant. This should take about 3-5 minutes. Be careful not to burn them. Once toasted, set them aside to cool.
  5. In a small bowl, whisk together the balsamic vinegar, olive oil, honey, Dijon mustard, and minced garlic until well combined. Season with salt and pepper to taste.
