  • 17/500 (oz/g) string beans (fresh, canned, or frozen)
  • 7/200 (oz/g) Greek yogurt (over 10% fat)
  • some salt and ground white pepper to taste
  • 2 garlic cloves or to taste
  • 1 tsp finely chopped parsley leaves
  • ½ tsp finely chopped peppermint leaves


  • blanche the string beans (for the fresh and frozen version) in salted water until slightly soft (al dente/undercooked), then drain them and wait to cool; if using canned string beans, wash and drain them well.
  • season the Greek yogurt with some salt and white pepper to taste.
  • add minced/crushed garlic into the yogurt bowl.
  • add the chopped greenery and stir the ingredients.
  • toss in the string beans.
  • combine ingredients very well, then place the appetizer in the fridge for at least 1 hour before serving.
  • top the appetizer with fresh parsley or mint leaves before serving; you can also add some thin tomato slices or halved cherry tomatoes for a vibrant look (optional.)
