When that craving hits, you should cook the only recipe that can satisfy both cravings: ham and cheese stuffed chicken breast with tomato sauce! It is somewhat similar to the Caprese chicken recipe, which is another masterpiece of Italian gastronomy!

Ingredients
  

  • 4 skinless boneless chicken breast halves (about 20 oz)
  • 7 oz mozzarella (4/8 slices, depending on their size)
  • 7 oz Parma ham (4 slices)
  • 3.5 oz olive oil
  • 2 oz butter
  • 3.5 fl oz white wine
  • 7 fl oz chicken stock
  • 7 oz tomato paste
  • 3.5 oz onions, finely chopped
  • 2-3 cloves of garlic or to taste, finely chopped or minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tbsp sugar or as needed
  • some salt and ground black pepper to taste
  • a few fresh thyme sprigs for garnishing (optional)

Instructions
 

  • Cut the chicken breast fillet lengthwise and be careful not to pierce it on the other side or cut it completely at the ends.
  • Layer each chicken breast half with a quarter of mozzarella and Parma ham, then close and seal them with toothpicks.
  • Pour half of the olive oil into a frying pan, add the butter, wait to melt, then place the stuffed chicken breast inside and fry them evenly on both sides until golden brown (about 3-4 minutes for each side).
  • Take the fried chicken breast out of the pan, place them on a plate, and cover them with foil to remain warm and juicy.
  • Pour the rest of the oil into the pan, add the chopped onions and garlic and fry them until glassy (about 3-5 minutes).
  • Pour the wine into the pan, stir and scrape up the brown bits from the bottom of the pan with a wooden spoon, then continue simmering for about 2 minutes.
  • Add tomato paste to the pan, then pour the chicken stock and a bit more lukewarm water if needed because the paste is too thick, then stir and bring the ingredients to a boil.
  • Reduce temperature to low, season the sauce with salt, ground black pepper, dried oregano, and dried thyme, then continue simmering until the sauce is low and pretty and has a slightly creamy consistency (about 10 minutes). Right before it's ready, add the sugar and stir well to combine the ingredients thoroughly.
  • Place the stuffed chicken breast halves into the tomato sauce and continue simmering ingredients until the meat is heated through and the sauce is low and has a viscous consistency (about 5 minutes).
  • Optionally, sprinkle over a few fresh thyme sprigs for added flavor and a professional look, then serve the food immediately.

Notes

Cooking Tips:
  1. Make sure to cut a deep pocket into the side of the chicken breast, being careful not to cut through to the other side. This will create a space for the stuffing and help the chicken cook evenly.
  2. To prevent the stuffing from leaking out during cooking, secure the opening with toothpicks before browning the chicken.
  3. Season the chicken well before stuffing it with ham and cheese. This will ensure that the flavor is evenly distributed throughout the dish.
