  • 70 oz (2 kg) fresh strawberries, hulled and chopped
  • 1/4 cup lemon juice
  • 1 tablespoon powdered fruit pectin (or follow the package instructions for liquid pectin)

  1. Prepare the Strawberries: Wash the strawberries thoroughly and remove the stems. Chop them into small pieces.
  2. Cook the Strawberries: Place the chopped strawberries in a large saucepan over medium heat. Add the lemon juice and stir to combine. Cook the strawberries, stirring occasionally, until they begin to break down and release their juices. This usually takes about 10-15 minutes.
  3. Mash the Strawberries: Once the strawberries are soft and have released their juices, use a potato masher or fork to mash them to your desired consistency. Some prefer chunkier jam, while others prefer it smoother.
  4. Add Pectin: Sprinkle the powdered fruit pectin over the mashed strawberries and stir well to combine. Alternatively, if using liquid pectin, follow the package instructions for when to add it.
  5. Continue Cooking: Continue to cook the jam, stirring frequently, until it thickens to your desired consistency. This usually takes about 5-10 minutes.
  6. Prepare Jars and Lids: While the jam is cooking, sterilize your jars and lids by boiling them in water for 10 minutes. Keep them warm until ready to use.
  7. Fill Jars: Once the jam has thickened, carefully ladle it into the sterilized jars, leaving about 1/4 inch of headspace at the top. Wipe the rims of the jars clean with a damp cloth.
  8. Process Jars: Place the filled jars in a water bath canner, ensuring they are covered with at least 1 inch of water. Process the jars according to the recommended time for your altitude and jar size (typically around 10-15 minutes).
  9. Remove Jars: After processing, carefully remove the jars from the water bath canner and place them on a towel-lined countertop. Allow them to cool completely.
  10. Check Seals: Once the jars are cool, check the seals by pressing down on the center of each lid. If the lid does not flex, it is sealed properly. Any unsealed jars should be refrigerated and consumed within a few weeks.
  11. Store: Label the sealed jars with the date and store them in a cool, dark place. Properly sealed jars can be stored for up to 1 year.
