- 70 oz (2 kg) fresh strawberries, hulled and chopped
- 1/4 cup lemon juice
- 1 tablespoon powdered fruit pectin (or follow the package instructions for liquid pectin)

- Prepare the Strawberries: Wash the strawberries thoroughly and remove the stems. Chop them into small pieces.
- Cook the Strawberries: Place the chopped strawberries in a large saucepan over medium heat. Add the lemon juice and stir to combine. Cook the strawberries, stirring occasionally, until they begin to break down and release their juices. This usually takes about 10-15 minutes.
- Mash the Strawberries: Once the strawberries are soft and have released their juices, use a potato masher or fork to mash them to your desired consistency. Some prefer chunkier jam, while others prefer it smoother.
- Add Pectin: Sprinkle the powdered fruit pectin over the mashed strawberries and stir well to combine. Alternatively, if using liquid pectin, follow the package instructions for when to add it.
- Continue Cooking: Continue to cook the jam, stirring frequently, until it thickens to your desired consistency. This usually takes about 5-10 minutes.
- Prepare Jars and Lids: While the jam is cooking, sterilize your jars and lids by boiling them in water for 10 minutes. Keep them warm until ready to use.
- Fill Jars: Once the jam has thickened, carefully ladle it into the sterilized jars, leaving about 1/4 inch of headspace at the top. Wipe the rims of the jars clean with a damp cloth.
