Tomato Cabbage Casserole

➡️ Cabbage is one of my favorite vegetables and, as such, I often cook it. One of my options for cooking cabbage is the baked tomato cabbage casserole, which is extraordinarily tasty due to the additional aromas of tomato and dill! This is a vegan recipe and I love it as much as any meaty cabbage casserole.

➡️ But what is a vegan cabbage casserole? A vegan cabbage casserole is a dish made from cabbage and other plant-based ingredients, excluding animal products like meat, dairy, and eggs. It typically involves layering cabbage with ingredients like rice, beans, vegetables, vegan cheese, and various seasonings. The casserole is then baked until the flavors meld together and the cabbage becomes tender. It’s a cruelty-free twist on the traditional casserole, suitable for those following a vegan diet.


➡️ Tomato cabbage casserole is the perfect weeknight meal because it’s quick, easy, and delicious. All you have to do is to wedge or chop the cabbage and some tomatoes, then mix the ingredients and throw them in the oven, and your casserole is ready for serving! It’s just that simple!

How to Cook Vegan Cabbage Casserole with Tomatoes from Scratch

What ingredients do you need for the tomato cabbage casserole recipe?

Sweet Cabbage Heads

1) 2,5 kg/90 oz of raw white cabbage
2) 750 g/27 oz of tomatoes
3) 1 large dill bundle
4) some salt to taste
5) 100 ml/3.5 fl oz of olive oil

How to make tomato cabbage casserole from scratch in 10 steps?

Tomato Cabbage Casserole

1) shred or cut the cabbage into strips with the knife
2) cut tomatoes into cubes
3) chop de dill coarsely
4) place half of the cabbage in a layer on a large tray, then add all over the tomato pieces
5) sprinkle chopped dill all over
6) season with some salt to taste
7) place the rest of the cabbage into a layer
8) pour a little olive oil all over
9) pour a little water just to immerse the vegetables about 2/3, then place the tray in the oven at 200C/390F for 20 minutes
10) take the tray out of the oven and mix the ingredients, then put the tray back in the oven, repeat this operation every 10-15 minutes until the veggies are soft and the liquid in the tray is low (in total, you need about 30 minutes or so)

➡️ This recipe for cooking vegan tomato cabbage casserole is so simple that I don’t have any significant tips to share in order to get the best results. The only thing I underline is to chop the cabbage into thin wedges to help cooking better the cabbage fiber, which can be pretty hard when raw.


➡️ Another thing you should note is to cook the cabbage in the oven at low temperatures for evenly softening. This will be also helpful if you mix the ingredients in the tray one-two time.
