➡️ Cabbage is one of my favorite vegetables and, as such, I often cook it. One of my options for cooking cabbage is the baked tomato cabbage casserole, which is extraordinarily tasty due to the additional aromas of tomato and dill! This is a vegan recipe and I love it as much as any meaty cabbage casserole.
➡️ But what is a vegan cabbage casserole? A vegan cabbage casserole is a dish made from cabbage and other plant-based ingredients, excluding animal products like meat, dairy, and eggs. It typically involves layering cabbage with ingredients like rice, beans, vegetables, vegan cheese, and various seasonings. The casserole is then baked until the flavors meld together and the cabbage becomes tender. It’s a cruelty-free twist on the traditional casserole, suitable for those following a vegan diet.
➡️ Tomato cabbage casserole is the perfect weeknight meal because it’s quick, easy, and delicious. All you have to do is to wedge or chop the cabbage and some tomatoes, then mix the ingredients and throw them in the oven, and your casserole is ready for serving! It’s just that simple!
