Ingredients
- 35/1 (oz/kg) fresh mushrooms (Portobello or another type)
- 10/300 (oz/g) yellow onions
- 25/700 (fl oz/ml) mashed tomatoes or thick tomato broth
- 4 tbsp sunflower oil or olive oil
- salt and ground black pepper to taste
- ½ tsp ginger powder or coriander powder
- ½ tsp dried rosemary or 1-2 sprigs of fresh rosemary
- 1-2 dried bay leaves (optional)
- 1 tbsp granulated sugar
- 2 tbsp red wine vinegar
- a bundle of parsley, dill, or coriander for garnish (optional)
Instructions
- cut the mushrooms into smaller pieces if necessary, then place them into a frying skillet, pour 2 spoons of oil, mix, place the lid on the skillet and sautee until the mushrooms eliminate the water completely and are slightly golden.
- remove the mushrooms from the skillet.
- meanwhile, peel the onions off, chop them finely, then place them into the same skillet that you have used previously.
- pour 2 spoons of oil and fry the onions at a high temperature until glassy.
- peel tomatoes off and mash them coarsely (not necessary if you are using tomato broth.)
- add the mashed tomatoes or broth over onions and mix.
- season with salt, ground black pepper, and ginger or coriander.
- add to the skillet the aromatic herbs, sugar, and vinegar.
- put the mushrooms back into the skillet, mix the ingredients, and simmer over a low temperature until the gravy thickens (20-30 minutes); add a roux to thicken the gravy if necessary.
- meanwhile, chop the greenery for topping if used.
- sprinkle greenery over this delicious mushroom gravy and serve it immediately as a side dish.
