Chicken Recipes - Raw Whole Chickens

1) 2 chickens of 1,5 kg/50 oz each
2) 500 ml/17 fl oz of thick tomato broth
3) some salt or salted red pepper paste to taste
4) some ground black pepper to taste
5) 1 tsp of dried rosemary
6) 5-6 garlic cloves or to taste, crushed or minced
7) 2 tbsp of olive oil

Tomato Roast Chicken

step 1: place chicken on a tray
step 2: place tomato broth in a bowl
step 3: season tomato broth with salt or salted red pepper paste
step 4: flavor the broth with ground black pepper and dried rosemary
step 5: add garlic and combine ingredients
step 6: pour olive oil and combine ingredients well
step 7: coat the chicken with the tomato marinade all over
step 8: place chicken in the fridge for at least 2 hours
step 9: place the chicken on a roasting rack or a tall bottle filled with water (optional)
step 10: pour about 500 ml/17 fl oz of lukewarm water into the tray, then place the tray in the oven at 280C/535F until the chicken is golden
step 11: switch off the oven and leave the tray inside for 15-30 min
step 12: cut the roast chicken off and serve it with tomato sauce from the tray added on top

  • for the best results, I recommend you to use a chicken of about 1.5 kg/50 oz
  • if you don’t have tomato broth at hand, you can replace it with 250 g/9 oz of tomato paste and 250 ml/9 fl oz of cold water that you mix previously
  • dried rosemary can be replaced with rosemary twigs that you place inside the chicken during grilling
  • even id not mandatory, I still recommend you to wait some time before grilling to allow time for the chicken to soak up flavors from the marinade
  • wait some time when the chicken is roasted wait some time so that the juices resulting during cooking are absorbed in the meat
