Ingredients
  

  • 70/2 (oz/kg) turkey thighs (about 3 thighs)
  • some salt and ground black pepper to taste
  • 1 tsp dried rosemary
  • 3 tbsp minced garlic
  • 3 tbsp olive oil
  • some rosemary twigs (optional)

Instructions
 

  • remove the bone from the turkey thighs.
  • make some cuts in the thicker parts to level the thigh.
  • rub with salt on both sides.
  • sprinkle some dried rosemary over the inner side.
  • add 1 tbsp of minced garlic/thigh.
  • grind over some black pepper.
  • spread the garlic into an even layer.
  • roll the thigh and bind it in 3 places; alternatively,you can also use toothpicks to secure it.
  • place the thigh on a tray with the skin up; continue the same way with the other thighs.
  • pour some water into the tray; you can also use vegetable/chicken stock or even wine.
  • add some rosemary twigs (optional.)
  • grind some pepper over the thighs.
  • pour some olive oil over the thighs for better roasting.
  • cover the tray with foil and place it into the oven at 180 C/350 F for 45 minutes.
  • remove the foil and roast the thighs at 270 C/520 F for 30 minutes or until golden.
  • remove the tray from the oven, wait 15-30 min, then remove the bindings or toothpicks.
  • slice the turkey thigh roll as desired, then serve them immediately along with your preferred side dish.
