Cooking an Easy Vegetable Rice Pilaf Recipe with Pork

1) remove excessive fat from the pork shoulder if necessary, then dice it and place it into a pot (you can use lean fresh pork ham as well, without skin and fat)
2) peel onions off, chop and place them into the pot
3) chop tomatoes and add them to the pot
4) remove seeds and stubs from the bell peppers, cut them into thin strips, and add them to the pot
5) season ingredients with some salt and ground black pepper to taste
6) pour some sunflower oil into the pot (necessary only when the meat is very lean), then fill the pot up with lukewarm water
7) place the pot on the stove over a medium temperature and boil ingredients until the meat is soft (about 30 minutes)
8) reduce temperature, add rice to the pot, and boil ingredients until the rice is soft (about 15 minutes)
9) switch the stove off, place a lid on the pot, and wait about 15 minutes before serving this delicious vegetable rice pilaf recipe (VERY IMPORTANT!)

I like rice pilaf very much and therefore I cook various pilaf recipes, with or without meat. On this page, I present a vegetable rice pilaf recipe with pork, a less common ingredient for this type of rice dish.

Preparing the vegetable rice pilaf recipe with pork is very simple, requires few ingredients, common to most of us, and, in addition, involves a relatively short time spent in the kitchen.

Being so easy to cook, there is not much to say about the recipe. Maybe one of the things I need to emphasize is to use lean, low-fat pork. Pork shoulder is ideal because it is juicy, but you can also use the inside part of fresh pork ham.

Regarding the vegetables used for this vegetable rice pilaf recipe, most often I use onions, tomatoes and bell peppers, these being common in the place where I live. Onions and tomatoes are a must to get a juicy and tasty vegetable pilaf, but bell peppers can be replaced with other fresh vegetables such as zucchini.

An extremely important thing is not to serve the pilaf as soon as you stop the fire. It is crucial to cover the pot with the lid and wait about 15 minutes. This is very important because steam accumulates under the lid and they make the rice become very fluffy. In addition, during this time, the rice absorbs a large part of the juice and makes the pilaf not watery but very juicy and smooth.
