This White Bean Salad or Baked Bean Salad is a delightful medley of flavors and textures. It combines tender white beans with the zesty crunch of red onions, the sweetness of carrots, and the tangy goodness of pickles. All of these ingredients are bound together by a creamy and rich mayonnaise dressing. This salad is not only a feast for the taste buds but also a breeze to prepare, making it a perfect side dish for picnics, barbecues, or any meal where you want to add a touch of freshness and creaminess. Ingredients
  

  • 17/500 (oz/g) white beans, red kidney beans, or another bean type (you can use canned baked beans instead, which will shorten the preparation time to just 15 minutes)
  • some salt and ground white pepper
  • 8 tbsp sour cream ( with at least 12% fat)
  • 4 tbsp mayonnaise
  • 2 tbsp mustard
  • a small fresh dill bundle
  • 3.5/100 (oz/g) red onions
  • 3.5/100 (oz/g) carrots
  • 7/200 (oz/g) pickled cucumbers

Instructions
 

  • boil the beans in salted water until soft (about 50 minutes), drain the water, place them into a bowl, and wait to cool to room temperature (skip this step if you're using canned beans.)
  • place the sour cream into a bowl and add some salt and ground white pepper to taste.
  • add the mayonnaise and mustard over the cream, then combine the ingredients.
  • chop the dill, add it to the cream, and mix the ingredients again.
  • peel, wedge finely, and add the red onions over beans.
  • peel, grate finely, and add the carrots over beans.
  • drain the pickles well, cut them into thin slices, and add them over beans.
  • pour the sour cream sauce over beans, combine the ingredients thoroughly by hand, then place the white bean salad appetizer into the fridge for at least 1 hour (recommended.)

Preparation Tips for the Best Results:

1. Rinse and Drain the White Beans: Before using the white beans, rinse them thoroughly under cold running water to remove any excess salt or canning liquid. Drain them well to prevent excess moisture in the salad.
2. Dice Ingredients Uniformly: To ensure a balanced mix of flavors in each bite, take the time to dice the red onions, carrots, and pickles into uniform pieces. This will help distribute the flavors evenly throughout the salad.
3. Prepare the Mayonnaise Dressing Separately: In a separate bowl, mix the mayonnaise with any desired seasonings, such as salt, pepper, and a touch of sugar or lemon juice. This allows you to adjust the dressing’s flavor to your liking before combining it with the other salad ingredients.
4. Add Dressing Just Before Serving: To keep the salad fresh and prevent it from becoming too soggy, add the mayonnaise dressing to the salad just before serving. Toss everything together to ensure the salad is well coated but still maintains its crispness.
5. Chill Before Serving: For the best flavor, allow the prepared salad to chill in the refrigerator for at least an hour before serving. This allows the ingredients to meld together and the flavors to intensify.
