Final Notes for the Healthy Oven-Roasted Potatoes with Yogurt Dressing
➡️ Oven-roasted potatoes have a crispy outside and a tender interior. Above all, they’re great as a side dish for lunch or dinner. Oven potatoes are one of my best side dishes and especially combined with baked chicken. Needless to say, these oven-roasted potatoes go great with your beloved vegetarian main dishes if you’re a vegan or vegetarian. Here are a few suggestions to help you get the best results from my healthy oven-roasted potatoes recipe:
- it’s mandatory to use Greek yogurt for this recipe, the regular one is too watery and you will not have great results with it
- the quantities of honey and mustard can be adjusted according to your personal preferences, which also applies to garlic
- instead of parsley, you can use other aromatic herbs such as dill, coriander, mint, or basil
- it’s very important to cut the potatoes into medium-thickness slices, the ones that are too thin will dry excessively, while the ones that are too thick can remain raw inside
- it’s also very important to put the potato slices in a single layer on the tray
- don’t roast potatoes excessively, you know they are ready when you see they are slightly golden
- don’t prepare the Greek yogurt dressing in advance, it tends to get watery in a pretty short time
- serve the side dish a short time after it’s ready because the yogurt dressing tends to get watery and the roasted potatoes will soften
