As I mentioned, the recipe I share on this page is very tasty and, on top of that, very easy to prepare, so it’s worth trying it at least once. You will definitely make this recipe very often afterward!


➡️ If you think it’s a complicated recipe with many hard-to-find ingredients, you’re wrong. If you are unclear about what Greek yogurt means, well, it’s yogurt with a higher fat content, which gives it a firm texture and the dressing prepared with it will not be runny, as would a dressing made with plain yogurt. How to Cook Oven-Roasted Potatoes with Yogurt Dressing

What ingredients do you need for the yogurt roasted potatoes?

Raw Potatoes

1) 1 kg/35 oz of potatoes
2) 50 ml/2 fl oz of olive oil
3) some salt and white ground pepper to taste
4) 600 g/20 oz of Greek yogurt
5) 2 tbsp of Dijon mustard
6) 2 tbsp of honey
7) 1 tsp of granulated garlic or 1-2 grated garlic cloves
8) 1 small parsley leaves bundle

How to make oven-roasted potatoes from scratch in 13 steps?

Yogurt Roasted Potatoes

1) peel and cut potatoes into medium slices
2) place potato slices on a baking paper-lined tray
3) brush potato slices with olive oil on the upper side
4) season potatoes with some salt to taste
5) place the tray in the oven at 270 Celsius degrees or 520 Fahrenheit degrees and roast potatoes until golden on the bottom side (about 20 minutes), then flip potato slices and roast them until evenly golden (about 10 minutes)
6) place the Greek yogurt into a bowl and add over the mustard
7) add the honey into the bowl
8) season with some salt and ground white pepper to taste
9) add granulated garlic into the bowl
10) toss chopped parsley into the bowl
11) mix ingredients by hand to combine them very well
12) place the oven-roasted potatoes into a heat-proof dish when golden
13) pour the yogurt dressing over roasted potato slices and serve the food immediately

Final Notes for the Healthy Oven-Roasted Potatoes with Yogurt Dressing

➡️ Oven-roasted potatoes have a crispy outside and a tender interior. Above all, they’re great as a side dish for lunch or dinner. Oven potatoes are one of my best side dishes and especially combined with baked chicken. Needless to say, these oven-roasted potatoes go great with your beloved vegetarian main dishes if you’re a vegan or vegetarian. Here are a few suggestions to help you get the best results from my healthy oven-roasted potatoes recipe:

  • it’s mandatory to use Greek yogurt for this recipe, the regular one is too watery and you will not have great results with it
  • the quantities of honey and mustard can be adjusted according to your personal preferences, which also applies to garlic
  • instead of parsley, you can use other aromatic herbs such as dill, coriander, mint, or basil
  • it’s very important to cut the potatoes into medium-thickness slices, the ones that are too thin will dry excessively, while the ones that are too thick can remain raw inside
  • it’s also very important to put the potato slices in a single layer on the tray
  • don’t roast potatoes excessively, you know they are ready when you see they are slightly golden
  • don’t prepare the Greek yogurt dressing in advance, it tends to get watery in a pretty short time
  • serve the side dish a short time after it’s ready because the yogurt dressing tends to get watery and the roasted potatoes will soften
