Boiled Smoked Ham Shank with Eggs
Ingredients
- 50 oz large, meaty smoked ham shank
- garlic cloves to taste (I use a whole garlic head)
- black peppercorn to taste (I use about a teaspoon)
- 3 dried bay leaves
- 10 eggs
Instructions
- place the smoked ham hock into a large pot.
- peel the garlic cloves off and put them into the pot.
- add the black peppercorn and bay leaves into the pot, then fill it up with water to cover the ham.
- place the pot on the stovetop over a low temperature and simmer slowly the knuckle until it’s very tender even near the bone (check with a fork or knife), this step takes about 1-2 hours, depending on the ham size.
- meanwhile, remove the eggs from the fridge and wait to warm to room temperature (this will avoid breaking eggs when placed into the hot broth.)
- remove the shank from the pot, then put the eggs into the broth slowly and carefully to not break them.
- boil the eggs until the yolk is creamy or hard (4-6 minutes), of your choice.
- remove the eggs from the pot and wait until both the ham shank and eggs cool to room temperature.
- cut thin ham slices with a very sharp knife and serve them as a cold appetizer along with boiled eggs, cold horseradish sauce, spring onions, and red radish (optional.)
