Boiled Smoked Ham Shank with Eggs

Boiled smoked ham shank is a classic comfort food that is perfect for any occasion, from a cozy family dinner to a festive holiday meal. This savory dish is made by boiling a smoked ham shank in water, which allows the flavors to meld together and infuse the meat with a tender and juicy texture. The ham shank is traditionally served with a side of mashed potatoes, greens, or other vegetables to create a well-balanced and satisfying meal. You can also wait to cool and then serve it at breakfast, to make sandwiches, or as a snack.
Boiled smoked ham shank is a dish with a rich history that has been enjoyed for generations. Traditionally, the dish was prepared using only basic ingredients such as the smoked ham shank, water, and salt. However, over time, different cultures have added their own unique twist to the recipe by including herbs, spices, and other flavorings. For instance, some recipes include bay leaves, peppercorns, or cloves, while others use beer or apple cider vinegar to add more depth to the flavor. The dish can be served simple or with a variety of sides, such as boiled potatoes, sauerkraut, or creamy mustard sauce, making it a versatile and satisfying meal.
A typical way Hungarians serve the boiled smoked ham shank is with hard-boiled or soft-boiled eggs, according to preference. The ham shank is boiled, then left to cool, thinly sliced and then served with boiled eggs in the same dish as the ham, the liquid giving them a special taste.
Another typical way in which Hungarians serve boiled smoked ham shank is with dry bean stew, which is cooked separately and finally the ham cut into pieces is added. This dish is usually served with pickled cucumbers.

  • 50 oz large, meaty smoked ham shank
  • garlic cloves to taste (I use a whole garlic head)
  • black peppercorn to taste (I use about a teaspoon)
  • 3 dried bay leaves
  • 10 eggs

  • place the smoked ham hock into a large pot.
  • peel the garlic cloves off and put them into the pot.
  • add the black peppercorn and bay leaves into the pot, then fill it up with water to cover the ham.
  • place the pot on the stovetop over a low temperature and simmer slowly the knuckle until it’s very tender even near the bone (check with a fork or knife), this step takes about 1-2 hours, depending on the ham size.
  • meanwhile, remove the eggs from the fridge and wait to warm to room temperature (this will avoid breaking eggs when placed into the hot broth.)
  • remove the shank from the pot, then put the eggs into the broth slowly and carefully to not break them.
  • boil the eggs until the yolk is creamy or hard (4-6 minutes), of your choice.
  • remove the eggs from the pot and wait until both the ham shank and eggs cool to room temperature.
  • cut thin ham slices with a very sharp knife and serve them as a cold appetizer along with boiled eggs, cold horseradish sauce, spring onions, and red radish (optional.)

Cooking Tips for the Best Results:

  • Soak the ham shank: Before boiling the ham shank, it’s a good idea to soak it in cold water for a few hours or overnight. This helps to remove excess salt and any other impurities, resulting in a milder and more flavorful ham.
  • Choose the right pot: Use a large and deep pot to boil the ham shank. This will ensure that the meat is fully submerged in water and that there is enough space for the water to boil and circulate around the ham.
  • Add more aromatics: To enhance the flavor of the ham shank, you could consider adding more aromatics to the water. Besides bay leaves, peppercorns, and garlic, you can add other herbs and spices of your choice. This will infuse the meat with a subtle and complex flavor that will make it even more delicious.
  • Boil gently: It’s important to boil the ham shank gently to avoid overcooking the meat or causing it to fall apart. Once the water comes to a boil, reduce the heat to a low simmer and let it cook for several hours, until the meat is tender and falling off the bone.
  • Let it rest: Once the ham shank is fully cooked, remove it from the pot and let it rest for a few minutes before slicing and serving. This will allow the juices to settle and ensure that the meat is moist and flavorful.
