Ham Roll Ups with Homemade Potato Salad
Ingredients
- 17/500 (oz/g) potatoes, boiled with the skin on
- 2/50 (oz/g) pickles, finely chopped
- 2/50 (oz/g) carrots, peeled and finely grated
- 1/25 (oz/g) chives or green onions, finely chopped
- 14/400 (oz/g) ham, thinly sliced
- 10/300 (fl oz/ml) mayonnaise
- some salt and ground white pepper
Instructions
- cut the peeled potatoes into small cubes and place them into a bowl.
- add pickles, carrots, and chives to the bowl.
- season with some salt and pepper to taste.
- add mayonnaise to the bowl.
- combine the ingredients by hand very well.
- place 1-2 tbsp of potato salad over each ham slice, depending on their size.
- roll the ham slice tightly and fasten it with a toothpick if needed.
- place the ham roll-ups on a platter and sprinkle over some chopped chives or another fresh greenery of your choice.
