Notes
Cooking Tips for the Best Results:
- Choose the Right Pork Steaks: Select pork steaks that are of uniform thickness, ideally around 1 inch (2.5 cm) thick. Thicker steaks are less likely to dry out during grilling. Look for well-marbled steaks as the intramuscular fat enhances flavor and juiciness.
- Marinate for Flavor: Marinating the pork steaks adds depth and complexity to the flavor. Consider a traditional German marinade consisting of mustard, garlic, vinegar, and a blend of herbs and spices. Let the steaks marinate for at least 30 minutes or, for even better results, refrigerate them for a few hours or overnight.
- Preheat the Grill: Ensure your grill is properly preheated to a medium-high heat. The ideal temperature is around 350-400°F (175-200°C). A well-heated grill promotes even cooking and imparts a satisfying grill mark and smoky flavor to the pork steaks.
- Timing Matters: Grill the pork steaks to perfection by using a meat thermometer. Pork is safe to consume at an internal temperature of 145°F (63°C), but you can cook it slightly below this temperature and allow it to rest for a few minutes, as the temperature will continue to rise. This ensures that your pork steaks are juicy and not overcooked.
- Rest Before Serving: After grilling, let the pork steaks rest for a few minutes. This allows the juices to redistribute within the meat, keeping it moist and flavorful. Tent the steaks with aluminum foil during the resting period to retain heat.
