  • 70/2 (oz/kg) pork neck (Boston butt); you can also use pork chops
  • some salt and ground black pepper to taste
  • 1 tbsp brown sugar
  • 1 tbsp sweet paprika
  • 2 tbsp Dijon mustard
  • 5 garlic cloves or to taste, finely chopped or minced
  • 1 tbsp vegetable oil


  • cut the Boston butt into slices of about 2-finger thickness.
  • place the mustard into a bowl and add the garlic.
  • toss in the brown sugar and paprika.
  • season with some salt and ground black pepper to taste.
  • pour the oil and combine the ingredients well.
  • if needed, pour about 50-100 ml/9-17 fl oz of cold water to get a creamy consistency.
  • coat the pork steaks with marinade on both sides.
  • cover pork steaks with food foil and place them in the fridge for a couple of hours or overnight (optional)
  • unpack the pork steaks and grill them on the coal BBQ for 3-5 minutes on both sides or until golden.
