German grilled pork steak is one of my favorite foods and I especially like when I fry meat on a charcoal grill due to the smoky taste that adds to the marinade flavors. The marinade goes very well with both pork neck and pork chops, so you can choose the meat type you like at most!

1) 2 kg/70 oz of pork neck (Boston butt)
2) some salt and ground black pepper to taste
3) 0.5-1 tbsp of brown sugar
4) 1 tbsp of sweet paprika
5) 2 tbsp of mustard
6) 5-6 garlic cloves or to taste, finely chopped or minced
7) 1 tbsp of vegetable oil

German Grilled Pork Steak

step 1: cut the Boston butt into slices of about 2-finger thickness
step 2: place mustard into a bowl and add over the garlic
step 3: toss in the brown sugar
step 4: toss in the paprika
step 5: season with some salt and ground black pepper to taste
step 6: pour the oil and combine ingredients well
step 7: if needed, pour about 50-100 ml/9-17 fl oz of cold water to get a creamy consistency
step 8: coat the pork steaks with marinade on both sides
step 9: cover pork steaks with food foil and place them into the fridge for a couple of hours or overnight
step 10: unpack pork steaks and grill them on the coal BBQ for 3-5 minutes on both sides or until golden

  • for the BBQ grilled pork steak, I like mostly the pork neck, known also as pork collar, because it’s juicier than the pork chop, but you still can use the last one as well if you prefer it
  • as I mentioned in the preparation method, do not cut too thin slices of meat because they will dry out and will no longer be juicy
  • Germans like sweet food and this marinade is prepared in this way; however, you can adjust the sweet taste by the greater or lesser amount of sugar you add
  • you can also use an assortment of sweet mustard for marinating, and in this case there is no need to add sugar
  • if you also like the spicy taste, you can use hot paprika instead of the sweet paprika and the final taste of the grilled pork steak will be sweet-spicy
  • adjust the amount of garlic according to your personal taste, the one in the recipe gives a moderate taste of garlic
  • fry the meat on a smoldering embers, avoid putting it on a high heat because it burns on the outside and remains raw on the inside
  • if you don’t have a charcoal grill at hand, you can also fry the German pork steaks on the gas grill or even in the oven
