Yogurt Mayonnaise Sauce
Ingredients
- 3 eggs
- 1 tbsp mustard – you can use classic, sweet, or spicy mustard, of your choice (optional)
- 14/400 fl oz/ml sunflower oil or olive oil
- 2-3 tbsp yogurt (>10% fat) or sour cream (>12% fat)
- salt and ground white pepper to taste
Instructions
- boil 1 egg until the yolk is hard, then wait to cool to room temperature
- peel the boiled egg and separate the yolk and white
- place the boiled egg yolk into a bowl
- break the remaining eggs and separate the yolks and whites
- place raw egg yolks into the same bowl with the boiled yolk
- crush boiled yolk with a fork into very small pieces
- add mustard for more flavor (optional) and mix ingredients by hand to combine them very well
- combine ingredients by mixer while pouring oil in small amounts into the bowl
- the basic mayonnaise is ready when you added the entire oil amount and has a fine consistency
- add yogurt or sour cream, then mix ingredients slowly by hand until the mayonnaise sauce is smooth
Notes
- Choose the Right Yogurt: Opt for plain, unsweetened yogurt with a creamy consistency for the best results. Greek yogurt works well due to its thick texture, but you can also use regular plain yogurt. Avoid flavored or sweetened yogurt, as it may alter the taste of the sauce.
- Use High-Quality Mayonnaise: If you want to use store-bought mayonnaise, select a high-quality mayonnaise brand or make your own homemade mayonnaise as indicated if you prefer. The quality of the mayonnaise will greatly impact the flavor and overall quality of the sauce.
- Adjust the Yogurt-to-Mayonnaise Ratio: Finding the perfect balance between yogurt and mayonnaise is key to achieving the desired texture and taste. Start as indicated and gradually adjust to suit your preferences. If you prefer a tangier sauce, increase the amount of yogurt, while adding more mayonnaise will result in a creamier and richer sauce.
- Enhance the Flavor: While the base ingredients create a delicious sauce on their own, you can enhance the flavor by incorporating additional ingredients. Add minced garlic for a hint of pungency, freshly squeezed lemon juice for brightness, and a pinch of herbs like dill, parsley, or chives for added freshness. Experiment with different combinations to find your favorite flavor profile.
- Chill Before Serving: After mixing all the ingredients together, allow the sauce to chill in the refrigerator for at least 30 minutes before serving. Chilling helps the flavors to meld together and allows the sauce to thicken slightly, resulting in a smoother consistency. This step is especially important if you want to use the sauce as a dip or a spread, as the flavors will develop further with time.
