  • 8.5 fl oz buttermilk
  • salt and ground white pepper to taste
  • ½ tsp garlic powder or 1-2 grated garlic cloves
  • ½ tsp Provence spice mix (optional)
  • ½ tsp hot chili pepper powder (optional)
  • 3 tbsp all-purpose flour
  • 3 tbsp breadcrumbs
  • some olive oil or sunflower oil

Instructions
 

  • remove the skin and bone from chicken breast if needed, then cut it into fillets
  • place buttermilk into a shallow dish, then season it with salt and pepper to taste
  • add garlic powder and Provence spice mix to taste into the dish, then combine the ingredients (you can also add hot chili pepper powder if you like spicy food)
  • coat chicken breast fillets with flour
  • pass each chicken fillet through spiced buttermilk
  • coat each chicken breast fillet with breadcrumbs
  • put the chicken schnitzel on a tray coated with baking paper
  • sprinkle chicken schnitzel with some olive oil
  • put the tray in the oven at 180 C/360 F and bake the schnitzel until the coating from the chicken breast fillets becomes golden
  • flip the schnitzels, sprinkle again some olive oil, and bake them until the chicken schnitzel is evenly golden
